I love eggs, and they are a daily staple in my diet for breakfast, lunch, or dinner. There is a discussion that eggs like asparagus are tricky to pair with wine. Still, I have found them easily paired with Champagne in their purest form, such as sunnyside, poached, scrambled, or in an omelet. For decadence, you can give your scrambled eggs or omelet a splash of Champagne before frying; it gives them a little something special. \r\nA classic Champagne such as Taittinger Prelude pairs amazingly well with eggs! It cuts through the richness of the yolk, cleanses the palate, and complements the toast or French fries; you\u2019ll need to sop up your sunnyside eggs as I do. This Champagne is subtle and fresh on the nose, with mineral aromas that quickly give way to notes of elderflowers and spicy cinnamon. In the mouth, lean mineral Chardonnay notes delicately balance the aromatic strength of Pinot Noir. The lively palate is dominated by fresh citrus and white peaches in syrup.
