Living my whole life in the Greater Metropolitan Area of New York City, I get to experience the changing of the seasons. Autumns are cool and brisk, winters are cold and can be colder, the spring is essentially a slightly warmer, much wetter version of winter, and summers tend to start warm before moving fiercely into <strong>hot and humid conditions<\/strong> by early August. There are days\u2014and in some years, weeks\u2014when the heat and humidity in Lakeland, NJ is identical to (or higher than) Lakeland, Florida. These are days when you walk outside and your glasses steam up as a blanket of hot air envelops your body.<\/p>\n<p>And on these days,<strong> I just don&#8217;t feel like cooking<\/strong>. Something about the heat\u2014but especially the humidity\u2014pulls all the energy out of me, and by the end of the day I can&#8217;t even think of turning on the stove, oven, or grill.<\/p>\n<p><a href=\"https:\/\/wine365.com\/stage\/?attachment_id=11390\" rel=\"attachment wp-att-11390\"><img fetchpriority=\"high\" decoding=\"async\" class=\"aligncenter size-full wp-image-11390\" src=\"https:\/\/wine365.com\/stage\/wp-content\/uploads\/2021\/07\/italian-charcuterie.jpg\" alt=\"Salumi\" width=\"612\" height=\"612\" srcset=\"https:\/\/wine365.com\/stage\/wp-content\/uploads\/2021\/07\/italian-charcuterie.jpg 612w, https:\/\/wine365.com\/stage\/wp-content\/uploads\/2021\/07\/italian-charcuterie-300x300.jpg 300w, https:\/\/wine365.com\/stage\/wp-content\/uploads\/2021\/07\/italian-charcuterie-150x150.jpg 150w, https:\/\/wine365.com\/stage\/wp-content\/uploads\/2021\/07\/italian-charcuterie-175x175.jpg 175w, https:\/\/wine365.com\/stage\/wp-content\/uploads\/2021\/07\/italian-charcuterie-450x450.jpg 450w\" sizes=\"(max-width: 612px) 100vw, 612px\" \/><\/a><\/p>\n<p>Instead, I raid the cold-cut drawer, which is perpetually stocked with provisions from the stomach of Italy. A block of <a href=\"https:\/\/www.artisanalcheese.com\/collections\/italy\/products\/parmigiano-reggiano?variant=916718543\" target=\"_blank\" rel=\"noopener\">Parmigiano-Reggiano<\/a> cheese, a mound of mozzarella, paper-thin <a href=\"https:\/\/en.wikipedia.org\/wiki\/Prosciutto\" target=\"_blank\" rel=\"noopener\">Prosciutto di Parma<\/a>, and a selection of other <em>salumi<\/em>, such as <a href=\"https:\/\/en.wikipedia.org\/wiki\/Soppressata\" target=\"_blank\" rel=\"noopener\">Soppressata<\/a>, <a href=\"https:\/\/en.wikipedia.org\/wiki\/Genoa_salami\" target=\"_blank\" rel=\"noopener\">Salami<\/a>, <a href=\"https:\/\/en.wikipedia.org\/wiki\/Pancetta\" target=\"_blank\" rel=\"noopener\">Pancetta<\/a>, <a href=\"https:\/\/en.wikipedia.org\/wiki\/Mortadella\" target=\"_blank\" rel=\"noopener\">Mortadella<\/a>, <a href=\"https:\/\/en.wikipedia.org\/wiki\/Bresaola\" target=\"_blank\" rel=\"noopener\">Bresaola<\/a>, and <a href=\"https:\/\/en.wikipedia.org\/wiki\/Capocollo\" target=\"_blank\" rel=\"noopener\">Coppa<\/a>. Everything comes out, along with a bottle of Lambrusco, and goes on a wooden board. Then I raid the garden (or grocer) for a few leaves of basil, arugula, and a fresh beefsteak tomato\u2014you&#8217;ve not lived until you&#8217;ve tasted a ripe <a href=\"https:\/\/ediblejersey.ediblecommunities.com\/food-thought\/search-jersey-tomato\" target=\"_blank\" rel=\"noopener\">&#8220;Jersey&#8221; tomato<\/a> in the middle of August (though, they&#8217;re just as delicious from New York and Connecticut!). Finally, I grab a baguette (fresh or defrosted from the freezer), a bottle of good olive oil, and a bottle of REAL balsamic vinegar\u2014look for the word &#8220;Modena&#8221; or &#8220;Reggio Emilia&#8221; (the two places in Italy where it&#8217;s made) AND the letters &#8220;IGP&#8221; or &#8220;DOP&#8221; (which guarantee it&#8217;s authentic and from that area).<\/p>\n<p>The most complicated part of &#8220;cooking&#8221; this dinner is unwrapping the various foodstuffs and placing them on a plate in a somewhat organized matter (though, you&#8217;re free to layer everything in one big pile\u2014whatever floats your boat!). <strong>The entire process of preparation takes about five minutes<\/strong>\u2014up to ten if the baguette needs to be defrosted. Once everything is laid out on a plate (or plates, or one big wooden board), it&#8217;s time to uncork the juicy refreshing goodness of Lambrusco and dig in!<\/p>\n<p><a href=\"https:\/\/wine365.com\/stage\/?attachment_id=11430\" rel=\"attachment wp-att-11430\"><img decoding=\"async\" class=\"aligncenter lazyload\" data-src=\"https:\/\/wine365.com\/stage\/wp-content\/uploads\/2021\/07\/lambrusco-salumi.jpg\" alt=\"Bottle of Medici Ermete Concerto Lambrusco dry red wine from Emilia-Romagna next to Italian cured meats\" width=\"660\" height=\"624\" src=\"data:image\/gif;base64,R0lGODlhAQABAAAAACH5BAEKAAEALAAAAAABAAEAAAICTAEAOw==\" style=\"--smush-placeholder-width: 660px; --smush-placeholder-aspect-ratio: 660\/624;\" \/><\/a><\/p>\n<p>While this meal is simple, it&#8217;s fairly complete\u2014filling, nourishing, and utterly delicious. You get your muscle-building proteins and hunger-suppressing fats from the cheese and salumi, carb-loading energy from the baguette, and vitamins from the arugula and tomato. And of course, those all-important antioxidants (such as reservatrol) from the <strong>Lambrusco<\/strong>, which is the perfect match for everything on the table (which makes sense, because most of those foods come from the same place\u2014the Emilia-Romagna region of Italy).<\/p>\n<p>Pick at whatever you wish, in any order. Place pieces of meat on the bread, or eat them naked. Drizzle olive oil and\/or the balsamic on top of anything, or dip. Wrap meats around each other, or around breadsticks, if you have them. There are no rules, except one: take a small sip of <a href=\"https:\/\/wine365.com\/stage\/medici-ermete-quercioli-secco-reggiano-lambrusco-doc\/\">Lambrusco<\/a> in between bites, and be amazed at how well that almost-black, fizzy juice interacts with the fats, proteins, and saltiness.
