French farmers have cultivated it at least since the thirteenth century, though the name\u2014meaning \u201cblack pine,\u201d after its pinecone-like clusters of grapes\u2014came into fashion only in the nineteenth century. The tight formation in which the dark berries grow makes it susceptible to mold and bacteria, so it requires cool growing areas and diligent farming. <strong>Burgundy represents the spiritual (if not native) home of Pinot Noir.<\/strong> For many years in America and Britain, \u201cBurgundy\u201d denoted a generic style of red wine, regardless of grape variety, but a true vin Bourgogne rouge contains one grape only: Pinot Noir. Four of these have a reputation for exquisite red wines, from north to south: Co\u0302te de Nuits, Hautes-Co\u0302tes de Nuits, Co\u0302te de Beaune, and Co\u0302te Chalonnaise.<\/p><p><a href=\"https:\/\/www.kevinzraly.com\/\" target=\"_blank\" rel=\"noopener\">Kevin Zraly<\/a> likes to describe wine regions in concentric circles: Within France, you have the Burgundy region or Bourgogne AOC. Then you have the <strong>Co\u0302te d\u2019Or growing region<\/strong>. One of its two designated subregions is the <strong>Co\u0302te de Nuits<\/strong>. Within that circle, you move to the village level. Some villages, such as Fixin, Gevrey-Chambertin, and Morey-Saint-Denis, have vineyards classified as Premier Cru, meaning first growth or top level. Gevrey-Chambertin alone has twenty-six Premier Cru appellations, including Clos du Chapi\u0302tre, La Perrie\u0300re, and La Romane\u0301e. Most red Grand Cru appellations\u2014noted for their rich black cherry flavor with notes of chocolate and herbs that offer luscious tannins and bold acidity\u2014belong to the Co\u0302te de Nuits.<\/p><h2>HAUTES-CO\u0302TES DE NUITS<\/h2><p>The lesser-known villages and vineyards of the <strong>Hautes-Co\u0302tes de Nuits<\/strong> rise on the slopes of the southern part of the Co\u0302te de Nuits. Higher altitudes and cooling breezes help grapes retain acidity, giving them a strong, bright backbone. This subregion has no specific village appellations or Premier Cru vineyards; all wines are labeled Bourgogne Hautes-Co\u0302tes de Nuits. These fall a step above entry level, but you can find many affordable and highly drinkable bottles.<\/p><h2>CO\u0302TE DE BEAUNE<\/h2><p>Encompassing the next twelve miles south of the Co\u0302te de Nuits, the <strong>Co\u0302te de Beaune<\/strong> centers around the city of Beaune. To the north lie the villages Pernand-Vergelesses and <a href=\"https:\/\/wine365.us\/Jadot-Aloxe-Corton\" target=\"_blank\" rel=\"noopener noreferrer\">Aloxe-Corton<\/a>, and to the south of Beaune you\u2019ll find <a href=\"https:\/\/wine365.us\/Jadot-Pommard\" target=\"_blank\" rel=\"noopener noreferrer\">Pommard<\/a>, <a href=\"https:\/\/wine365.us\/Jadot-Volnay\" target=\"_blank\" rel=\"noopener noreferrer\">Volnay<\/a>, Meursault, Puligny-Montrachet, and others. This region produces some of the world\u2019s finest white wines as well as highly regarded Pinot Noir, offering food-friendly flavors of cherry and vanilla with pleasing aromatics. Vintners make it in a slightly lighter style than wine from the Co\u0302te de Nuits to the north.<\/p><h2>CO\u0302TE CHALONNAISE<\/h2><p>South of the Co\u0302te de Beaune, the <strong>Co\u0302te Chalonnaise<\/strong> produces white, red, rose\u0301, and sparkling wines.
