While no longer the fad <em>du jour<\/em> it used to be, I happen to think that an old-fashioned, cozy fondue party is a fabulous way to gather with friends as the days get colder and shorter!<\/p>\n<p>My fondue is simple to make. <strong>You don\u2019t need any special equipment\u2014just a heavy-bottomed, heat-proof pan that you can set over a small candle or a sterno can.<\/strong> Fondue is traditionally served with a crusty bread, but I also love to pair it with a medley of perfectly<a href=\"https:\/\/www.marcsievers.com\/la-vie-piquant\/2016\/3\/11\/simple-roa?rq=potatoes\" target=\"_blank\" rel=\"noopener noreferrer\"> roasted potatoes<\/a>. Did you also know that you can prepare fondue in advance? You can store it in the refrigerator in an airtight container for up to three days and <strong>reheat in a pan with a few splashes of white wine or heavy cream<\/strong> just before serving. This dish is comfort food and a soir\u00e9e starter all in one. Add a bottle (or two) of a bold red wine, a big green salad with my <a href=\"https:\/\/www.marcsievers.com\/la-vie-piquant\/2016\/2\/15\/french-bistro-vinaigrette?rq=french%20bistro%20vinaigrette\" target=\"_blank\" rel=\"noopener noreferrer\">French Bistro Vinaigrette<\/a>, really fun friends, and you\u2019re all set!<\/p>\n<p><img fetchpriority=\"high\" decoding=\"async\" class=\"size-large wp-image-3904 aligncenter\" src=\"https:\/\/wine365.com\/stage\/wp-content\/uploads\/2020\/10\/Fondue-1024x679.jpg\" alt=\"Fondue\" width=\"770\" height=\"511\" srcset=\"https:\/\/wine365.com\/stage\/wp-content\/uploads\/2020\/10\/Fondue-1024x679.jpg 1024w, https:\/\/wine365.com\/stage\/wp-content\/uploads\/2020\/10\/Fondue-300x199.jpg 300w, https:\/\/wine365.com\/stage\/wp-content\/uploads\/2020\/10\/Fondue-150x99.jpg 150w, https:\/\/wine365.com\/stage\/wp-content\/uploads\/2020\/10\/Fondue-768x509.jpg 768w, https:\/\/wine365.com\/stage\/wp-content\/uploads\/2020\/10\/Fondue-640x424.jpg 640w, https:\/\/wine365.com\/stage\/wp-content\/uploads\/2020\/10\/Fondue-860x570.jpg 860w, https:\/\/wine365.com\/stage\/wp-content\/uploads\/2020\/10\/Fondue-175x116.jpg 175w, https:\/\/wine365.com\/stage\/wp-content\/uploads\/2020\/10\/Fondue-450x298.jpg 450w, https:\/\/wine365.com\/stage\/wp-content\/uploads\/2020\/10\/Fondue-1170x775.jpg 1170w, https:\/\/wine365.com\/stage\/wp-content\/uploads\/2020\/10\/Fondue-270x180.jpg 270w, https:\/\/wine365.com\/stage\/wp-content\/uploads\/2020\/10\/Fondue.jpg 1500w\" sizes=\"(max-width: 770px) 100vw, 770px\" \/><\/p>\n<h1>Gruy\u00e8re Fondue<\/h1>\n<h2>Ingredients<\/h2>\n<p><em>Serves 6<\/em><\/p>\n<ul>\n<li>Gruyere \u2013 14 ounces, freshly grated<\/li>\n<li>Fontina \u2013 3 ounces \u2013 freshly grated<\/li>\n<li>Flour \u2013 2 tablespoons, all-purpose<\/li>\n<li>Butter \u2013 2 tablespoons, unsalted<\/li>\n<li>Shallots \u2013 \u00be cup, \u00bc\u201d diced<\/li>\n<li>Thyme \u2013 1 teaspoon, finely minced, fresh<\/li>\n<li>Garlic \u2013 4 cloves, thinly sliced<\/li>\n<li>Nutmeg \u2013 \u215b teaspoon, freshly grated<\/li>\n<li>Sea Salt \u2013 \u00be teaspoon<\/li>\n<li>Black Pepper \u2013 1 teaspoon, freshly cracked<\/li>\n<li>White Wine \u2013 1 \u00bd cups, Chardonnay recommended<\/li>\n<\/ul>\n<h2>Directions<\/h2>\n<ol>\n<li>In a large bowl, combine both cheeses and the flour and toss to coat.\u00a0 Set aside.<\/li>\n<li>Next, in a medium heavy-bottomed pot set over medium heat, add the butter.\u00a0 Once hot add the shallots and thyme and cook for 3-5 minutes stirring occasionally until the shallots are translucent.\u00a0 Add the garlic, nutmeg, salt, and pepper, and cook for 60 seconds, being careful not to burn the garlic.<\/li>\n<li>Pour in the wine and allow it to come to a boil.<\/li>\n<li>Finally, add the cheese mixture in small handfuls and whisk briskly until smooth before adding in more cheese.\u00a0 Repeat this step until all of the cheese has been added.<\/li>\n<li>Transfer the fondue to a heat-proof pan set over a candle or sterno can to keep warm and serve immediately.\u00a0 If the fondue gets a little thick as it sits, add a splash of wine.<\/li>\n<\/ol>\n<h2>A Few Tips to Keep in Mind<\/h2>\n<ul>\n<li>Make sure to measure the cheese after cutting away the rind for the most accurate measurement.<\/li>\n<li>I like to garnish the fondue with a sprig of fresh thyme and a few of the leaves for a simple, but beautiful presentation.<\/li>\n<\/ul>\n<h1>Wine Pairing<\/h1>\n<p>If you\u2019re going for red, a Pinot Noir like the <a href=\"https:\/\/wine365.com\/stage\/shop-for-wine\/?gProdNM=Montes%20Alpha%20Pinot%20Noir\" target=\"_blank\" rel=\"noopener noreferrer\">Montes Alpha Pinot Noir<\/a> will pair well with the creamy cheeses.
