Louis Jadot Steel Chardonnay

Our doctors advise us to eat fish at least twice a week for healthy proteins and Omega-3 fats; well, I am complying tonight with the catch of the day fresh striped bass and a glass of Louis Jadot Steel Chardonnay (last I checked, wine is healthy too). My go-to recipe is super simple when it comes to fresh fish: for 2-inch filets, sprinkle salt and pepper, coat in flour and dust off excess before frying in grapeseed oil (to coat the pan) in super hot cast iron pan. Sear for 2 min on the skin side first (if you like crispy skin like me) and 1 min on the other. Then, let it rest for 2 min on the cutting board before plating. Serve with bib lettuce salad, chopped scallion, thinly sliced radishes, cucumber, sprigs of dill, dress with lemon, and olive oil, et voila. The Steel Chardonnay is the perfect complement to this meal with aromas of apple, white flowers, and citrus: medium-light body, with good minerality, and thanks to the steel tank fermentation, which produces a pure Chardonnay, it has a clean, refreshing taste to balance the fatty fish and citrusy salad – Bon Appétit!

This wine shows high-toned aromas of citrus, mandarin orange, white flower, pear and apple, with flinty minerality. Surprisingly concentrated and balanced for such a young wine, the flavors on the palate are at once delicate, powerful and rich.
