How does Tavel Rosé differ from your typical light pink Rosé? 

Rosé wines are made from red grape varieties, the same grapes used to produce red wines. The difference lies in how long the grape skins remain in contact with the juice. In red wine production, the skins ferment with the juice for several weeks, which creates a deeper color, fuller body, and richer tannins. 

For most rosés, the contact time is brief, usually just a few hours, resulting in a lighter color and more delicate body. Once the desired shade and flavor are achieved, the skins are removed and the juice continues to ferment separately. 

Tavel Rosé, however, is distinctive because it undergoes a longer maceration period, allowing the skins to stay in contact with the juice for an extended time, often between 12 and 24 hours. While there are many excellent options, our top choice is the Château d’Aqueria Tavel Rosé. Château d’Aqueria is the largest estate in Tavel and is unique in that its vineyards form one continuous expanse rather than being scattered throughout the appellation. Widely regarded as the finest wine of Tavel, the estate has a rich history dating back to 1595. Today, its 163 acres of sandy-clay vineyards surround the château, and all grapes are estate-grown using sustainable practices. 

About the Wine 

  • GRAPES: Grenache (50%), Syrah (20%), Clairette (10%), Mourvedre (10%), Cinsault (5%), Bourboulenc (5%) 
  • ABV: 14%  
  • AGING: 6 months in concrete and stainless-steel tanks 
  • Tasting Notes: The intense pink color is characteristic of a great Tavel. Aromas of raspberry, wild strawberry, and pomegranate share the glass with peppery notes. The wine is balanced and flavorful, and the finish is long.

Winemaking Process 

  • Grapes are hand-harvested then destemmed and chilled. 
  • Varieties are blended two by two and undergo a 12-to-24-hour maceration. 
    • The 12-to-24-hour maceration is what makes it have the depth 
  • Once the vibrant color is obtained, the tanks are bled and the marcs are pressed to add to the free-run juice. 
  • The juice then undergoes temperature-controlled fermentation for 15 days. 
  • This wine sees no malolactic fermentation and no oak contact. 
    • What does this mean? Basically, there are none of those “buttery” qualities or those spicy notes from the oak. 
  • The final blend takes place in December before bottling. 
  • This results in a flavorful, vibrant, and food-friendly rosé that can be enjoyed year-round and cellared for several years
