I have opted for a chilled (57-59 F) bottle of Medici Ermete Quercioli Secco Reggiano Lambrusco DOC to complement my meal. This dry yet fruity and refreshing sparkling red has the pedigree to pair with salumi and hardy cheeses. Lambrusco hails from the heart of the Emilia-Romagna region of Italy, which has gifted the culinary world with mortadella, Prosciutto di Parma, pancetta, Parmigiano Reggiano, Grana Padano, and balsamic vinegar. Add a loaf of crusty bread, olives, or grapes and enjoy!
