Poema Cava Extra Dry
It’s a well-known fact that fried food pairs well with sparkling wine, but it’s worth repeating: fried food and bubbles, BFFs 4 life! The acidity and effervescence cuts through rich, fatty, crispy fried coatings. Today is National Fried Chicken Sandwich Day, and I’ve paired a Poema Cava Extra Brut with first-rate fried chicken from a great local spot (Chic Hen, if you’re in BK). When it’s time to eat that fried chicken sandwich, or just plain fried chicken as I did, there are many options, from indulgently delicious to affordable luxury. My answer to the latter is cava, a Spanish sparkling wine. Strictly Metodo Tradicional, the same traditional method used to craft Champagne, cavas are known for their aromas of green apple and almond, all-around crispy fruitiness, ease of drinkability, and incredible affordability.
