When her partner loved the sandwich (that she had hoped would be painful and inedible) he opened a restaurant, and the legendary Hot Chicken Sandwich was born! If you’re in the Nashville area, or are looking for a spicy fix you’ve probably struggled to find a good wine to pair with those spicy-hot sensations. While spice can be hard to pair with wine, your safest bet is a slightly sweet, low to moderate alcohol white wine. Get funky with your spicy chicken and Zind-Humbrecht’s Gewurztraminer- a match made in hot chicken heaven. The slight residual sugar in the wine will offset the cayenne and hot sauce, and I promise you will taste better than slugging a glass of milk to cool your tongue.
