@DomenicaCooks: “BENVENUTO SETTEMBRE ✨ Welcoming September with a nice dish of hand-cut farfalle 🦋 with hazelnut pesto and a glass of Michele Chiarlo Barolo🍷

I was tasked by @qbcucina and @wine_365 to come up with a pasta recipe and wine pairing. I used my double-sided pasta cutter from @qbcucina to make the cocoa-spiked farfalle (swipe to see the tool & technique) and dressed the pasta with a rich hazelnut pesto that also has a bit of cocoa in it. Really pleased with the way it all came together.

Wine pairing is generally not my forte (it’s @scottvance’s dept) so I relied on a favorite truism: what grows together goes together. Barolo is a big, elegant wine from Piemonte made from Nebbiolo grapes. The region is also known for its buttery rich hazelnuts 🌰 I had a hunch the two might go well together, and they do; the toasty nuts are a good match for Barolo’s tannins and structure.
