Crushing Me Softly

Carbonic maceration is a method of winemaking in which the grapes start fermentation within their own whole-berry selves, without being crushed initially. The resulting wines are soft, fruity, and low in tannins, with distinctive cinnamon, banana, and even bubble-gum notes.
