What? You didn’t know it was National Sausage Pizza Day? (Yes, there’s a day for pepperoni as well, but not today.) Assuming you’re celebrating this pizza holiday, you’ll want a perfect pairing — a wine that has the racy acidity and tannic stamina to stand up to spicy, fatty sausage, bright tomato sauce, and gooey cheese. The best wine I can think of is a Chianti, but specifically, Chianti Classico. This example from Tenuta di Nozzole works well with sausage pizza (as well as pizza with other toppings) and is a no-brainer with pasta doused in the red sauce (or “gravy”) of your choice.
