Here’s a secret dinner hack: toss together a simple salad, pop some kernels, and open a cold drink. I love a giant bowl of popcorn and admit I resort to this menu multiple times over the course of a month. To make it as easy as possible (because that is why I’m eating popcorn at dinner, in the first place), I just salt it with fine grey sea salt from Kalustyan’s, or Sel gris-velvet de Gurende, France, which has “high mineral content” and “a ‘buttery’ feel as it melts on your tongue.” On this National Popcorn Day, maybe I’ll dress it up with grated Parmigiano! Either way, no matter the season, I always pair my popcorn with a chilled drink to cut through the saltiness and refresh my mouth. This Gavi DOCG is perfect: made from 100% Cortese, this Piemontese wine is aged on its lees for complexity and made entirely in stainless steel, which helps highlight its crisp citrus and mineral flavors.
