Olives are a staple in my diet as the child of an Italian x Spanish family. In my opinion, there are many wines that go with olives, but the best wines for olives are those from the Motherland of Italy. The olive will always pair well with a high acid white wine to counter the salty, fatty olive. The next time you reach for these chubby delights, try pairing it with an Italian wine like Tenuta Di Salviano Orvieto Classico Superiore. The Orvieto is primarily Trebbiano based, and its high acidity will cut through the fat to create a Mediterranean marriage in your mouth.
