A. Tannins and acid give wine ageability and structure—essential components if you want to age a wine. Another important factor is the overall balance a wine has among all its components (alcohol, tannins, acidity, flavors, etc.).

It doesn’t matter how many calcium supplements you give your barrel of wine, they won’t help its “bones” or structure; and neither will steel beams. And most people prefer their wines to age naturally, so don’t ruin it with Botox. Plus no one wants to smell nuances of Oil of Olay!
