Ice Ice Baby

Ice wine (also called Eiswein in Austria and Germany) is a type of wine made by letting the grapes freeze on the vine at 20F. It is a dessert wine characterized by extreme sweetness balanced with bright acidity.  Some even say it is double the sweetness of Coca Cola! The water freezes; however, the sugars & other dissolved solids do not, which allows for a more concentrated grape juice to develop. The grapes are pressed while still frozen. Ice wine is expensive, hard to make, and requires 4-5x as many grapes, but it is an extremely unique flavor and perfect for the end of your meal.
